Mache History & Health Benefits:

  1. Also known as “corn salad”, European peasants foraged for wild mache as early as the 1500’s. As a cultivated crop, the main source of production in Europe is in Nantes, France. Mache has a nutty flavor that is so versatile, it can be added to most salads or cooked in a wide variety of dishes.
  2. 3 times more Vitamin C than lettuce, mache also contains nutrients beta-carotene, B6, iron, and potassium
  3. Mache is best eaten as a salad but can also be used in cooking as a spinach substitute
